Thai Red curry

Curry paste :
10 Red Chillies................4 Lemon grass
2 Lime leaves...................6 Small shallots
1 Bunch fresh coriander....50g Ginger
Zest and juice 2 limes......1 Tsp Salt
2 Tsp Black pepper
2 Tsp Ground coriander
1 Tsp Turmeric................1 Tsp Paprika
6 Cloves garlic................4 Tbs Ground nut oil
10 Chicken breast
3 Tins coconut milk
4 Tbs Nam pla (fish sauce)
4 Tbs Kolhaphur goor (palm sugar)
8 Tbs creamed coconut block
Chopped coriander 1 handful
625g Plain rice

Serves 10
1. To make the curry paste put all the ingredients in a food blender
until a fine paste is formed.
2. Slice the chicken breasts and gently brown in a large saucepan,
add the curry paste and continue to fry. Let the spices cook out.
3. Add the coconut block, coconut milk, palm sugar and nam pla
and cover, allow to cook for 15 minutes or until chicken is cooked
through.
4. Garnish with fresh coriander and serve with plain boiled rice.
